Spinach Burgers

This was a quick and easy recipe that worked out great as we are always pretty hungry after work and do not want to wait forever for something to cook.

First, drain the spinach.  The recipe that I got off pinterest, but tweaked a little, called for a bag of frozen spinach, but I used canned spinach because I got it right after work and did not want to wait for frozen spinach to thaw out.  Next time I would like to use fresh spinach.

Then I made the rest of the burger concoction: eggs, onion, cheese, bread crumbs, salt, and garlic.

After mixing that with the spinach and shaping them I put them into a large sauté pan lightly coated with coconut oil, and cooked them until they were brown and holding their shape well.

In the mean time I prepared the fixins for the burger – lettuce, tomato, and onion.

It was scrumptious!  And pretty darn filling, too.  Jake and I both ate one and split another one and that had me stuffed – probably didn’t need that half. Ha!  I don’t think it really needed any condiments, but I tried it with a little ranch because I am obsessed with it and that was tasty.  The recipe is alterable to your taste.  I definitely changed it to mine.  For example I used about half the salt the original recipe called for, I didn’t use red pepper flakes, and I used fresh garlic instead of garlic powder.  You can also use any type of bread crumbs you like or any cheese you like.  I used seasoned bread crumbs and finely shredded cheese that included mozzarella, provolone, parmesan, romano, fontina, and asiago cheeses.

It was a good start to eating vegetarian.  🙂


Spinach Burger Recipe

Ingredients

1 13.5 oz. can spinach, drained

2 egg whites

1 whole egg

1/4 cup diced onion

1/2 cup shredded cheese

1/2 cup bread crumbs

1/2 teaspoon salt

1 large garlic clove, minced

Toppings and/or condiments of your choice.

Directions

Mix all of the ingredients in a bowl.

Shape into about five patties.

Cook in a lightly oiled sauté pan on medium high heat until firm and golden brown – approximately seven minutes.

Build your burger with your favorite toppings and condiments and enjoy.
